Large cardamom (Amomum Subulatum Roxb.), also called black cardamom, big cardamom of Nepal Cardamom in international spice market, is grown only in the sub-Himalayan region of Nepal, northeast India (mainly Sikkim) and Bhutan. The local name for the spice is Alainchii. It is called ‘Bara Elaichi’ in Hindi ( also in Bengali Punjabi and Urdu), Nepal cardamom in German and cardamom noir in French. It is used as a flavourant in dishes like pulau, biryani and meat preparations. It is an ingredient in bakery products, curry powder and spice masala mixtures, and also used in ayurvedic and unani medicines.
